Could someone advise me on gaining some information on why different employment status matters?
As i've gone through the listed factsheets but there is not anything that really describes the differences.

It matters because depending on your status as either an employee or non employee (say a self employed indidvidual) then the employment legislation which is relevant will be different. One example being dismissal. There is a lot of legislation regarding 'fair dismissals' but this only applies if you are an employee rather than a self employed individual.
There are important distinctions between 'self employment' & being an 'employee'
